Project goals
To isolate structurally related combinations of microorganisms formed during berry processing in vitro, perform their metagenomic analysis, and, in combination with cultured microorganisms, adapt them to the fermentation of secondary berry processing products in order to achieve structural changes in the processed raw materials and optimize the qualitative and quantitative extraction of the functional substances they contain.

Detailed summary
Project objectives: 1. In vitro isolation of structurally related microbial combinations (SSMD) formed during the processing of berries and other agro-raw materials and their metagenomic analysis in order to create synergistic microbial combinations for the fermentation of berry pomace. 2. Composition of isolated and metagenomically evaluated structurally related microbial combinations (SSMD) with cultured microorganisms and (KM) application to the fermentation of berry pomace. 3. Application of the resulting structurally related microbial combinations (SSMD) and cultured microbial compositions (SSMD+KM) to the evaluation of the qualitative and quantitative chemical composition of functional substances (polyphenolic antioxidants, dietary fibers, organic acids, vitamins, sugars, micro/macroelements, amino acid profile, etc.) contained in processed berry pomace. 4. Application of functional substances obtained from berry pomace (polyphenolic antioxidants, dietary fibers, organic acids, etc.) for the development of prototype product recipes and technologies, assessing microbiological safety, nutritional composition and energy value 5.
